1 1/2 tsp kosher salt
¾ tsp black pepper
1/2 cup green onions sliced
2 large lemons, juiced
2 tsps Dijon mustard
2 tsps honey
5 tbsp EVOO
3 cups fresh corn kernels raw (cut from 4 ears)
2 cups multicolored cherry tomatoes halved
red onion diced
1/4 cup basil leaves chiffonade
4 cups baby spinach optional
Delicious with grilled chicken thighs!
In a large bowl, whisk together remaining salt, pepper, shallot, lemon juice, mustard, and honey in a bowl. Slowly drizzle in oil, whisking constantly. Add corn, tomatoes, onions, spinach and basil. Toss to coat.
